"Easy as apple pie" - how many times have you heard that? Well now you can make make apple pie like a pro and not have a nervous breakdown in the process! Here are my top ten tips for making the perfect apple pie every time.

1) Apples! Apples! Apples! The most important part of the apple pie is obviously the apples. If you are lucky and live in an area with apple groves then pick a combination of tart and sweet apples and put them in a pie within 24 hours. If you live nowhere near an apple grove I recommend Granny Smith apples for your pie. The tartness combined with the sweetness of the sugar/cinnamon mixture creates an amazing taste. Another combination that works great is McIntosh and Cortland apples but only if the apples are fresh.

2) Don't burn the crust. When baking an apple pie, one of the big problems is burnt edges of the crust. To prevent this problem cover the edges of your pie with tin foil. But don't scrunch it down around the sides. Because the foil reflects the heat, the pastry edges may end up under baked. Or, you can actually purchase an edge guard at your local kitchen supply store that is placed over the edges of the pie to protect them from burning.

3) Taste the apples! Once you add your cinnamon/sugar mixture taste test your apples. Do not be afraid to add more brown sugar and cinnamon to your mixture. You can't spoil something good by adding something good to it!

4) Extra weight is a good thing!! If you bake your pie shell prior to adding the apple filling the pie shell might inflate. To prevent this from happening add dry beans to the bottom of the shell prior to placing it in the oven. Or you can actually purchase weighted beads that can be placed in the bottom of the shell to prevent the pastry from rising.

5) A mountain of apples is a good thing. Always prepare more apples than you think you will need. Make a mountain in the pie shell when you add the apples. Stretch the top pie crust over the mountain of apples as best you can. You will find while the pie bakes the mountain of apples will deflate. You will be left with a pie that has a sufficient amount of apples. Without the mountain you may end up with a caved in pie and few apples per slice.

6) The garnish: Ice cream. Don't forget to offer ice cream with each slice of pie. Be imaginative. Vanilla ice cream is the standard scoop to add to a slice of apple pie. Try cinnamon or butter pecan ice cream instead. Cookies and Cream ice cream works very well, as does Pistachio and Peach ice cream.

7) Apple Pie with a twist! Instead of the standard apple pie, look for variations of the recipe. Try Dutch Apple pie or French Apple pie or apple pie combinations like Rhubarb/Apple or Cranberry-Raisin-Apple pie.

8) Caramel yum!! Instead of ice cream, drizzle melted caramel over your apple pie. This gives your pie an added sweetness that will impress your family and friends.

9) Sweetness other than sugar. If you do not think your apples are sweet enough but you do not want to add sugar, try 1tbsp lemon juice, some finely grated lemon zest, and 2 tbsp melted apple jelly. The addition of the jam adds a special sweetness to the pie.

10) Pretty as a picture. The top of the apple pie must be vented with a few slices of the knife through the top pie shell. Instead of simple slits add a pattern or pretty decoration. Cut your loved one's initials in the pie shell, or a heart, or star. Your imagination is the limit!

Most people love food, whether they admit it or not. And lots of us don't mind a drop of nostalgia now and then too. Combine the two and you've got a recipe for one of those "I remember my Granny making the most delicious apple pie from the fruit tree in the garden" kind of moment. In fact there are loads of old wives' tales about food, and we're not the only ones interested in them.

Doctors and various other experts are all digging up old sayings and brandishing them on the internet and in newspapers and magazines. Traditional wisdom is suddenly cool, or at least worth a second look. And lots of the advice concerns food and drink! Whether it's chicken soup for colds (surprisingly, it works) or beer to encourage a nursing baby (please don't try this at home), there is something for everyone.

So, did our mothers and grandmothers know more than we give them credit for when it comes to eating? Let's see...


Alcohol affects women more than men - true. Women don't have as much alcohol-metabolising enzyme as men do; they retain more alcohol in their bloodstreams and stomachs. So a man and a woman of similar size can drink the same amount, but the effect on the woman will be greater and last longer - drink sensibly girls!

An apple a day keeps the doctor away - true. Apples are full of antioxidants (and fibre) and may lower our risk of breast and colon cancer, as well as keeping us away from the doctor.

Eating cardamom cures garlic breath - true. This does seem to work, chew a whole cardamom pod until only the husk remains and then spit it out (discreetly).

Eating carrots improves your eyesight - true and false. Carrot consumption won't prevent night blindness but it can help reduce the chance of age-related macular degeneration.

Chocolate gives you acne - false. No foodstuff has been proven to trigger acne, which is caused by blocked pores, but eating too much chocolate will make you fat.

Coffee stunts your growth - false. Coffee doesn't affect growth but too much caffeine can prevent you from absorbing calcium and some other nutrients.

Cranberry juice prevents cystitis - true. Cranberries inhibit the spread of the bacteria that cause cystitis, by preventing them from clinging to your bladder, as do blueberries.

Eat your crusts, they're good for you - true. Bread crusts contain eight times more antioxidants than the rest of the loaf. But eating them won't make your hair curly or your teeth whiter.

Fish is brain food - true. Fish and seafood contain omega-3 and zinc, which are linked to slowing the rate of cognitive decline, so try to eat fish once or twice a week.

It's better to eat fruit on its own or after a meal - true. Fruit is digested more quickly than other foods, so eating it during a meal may cause it to begin fermenting in your colon - which can cause bloating and flatulence.

Eating grapefruit will increase your metabolism and burn fat - false. No food burns fat, but grapefruit is low in calories and full of nutrients.

If you swallow gum it takes seven years to digest - false. It goes straight through your system, along with any other non-food foreign bodies.

Oysters are the food of love - true and false. Oysters don't boost libido but they are rich in zinc, which can aid fertility in both men and women.

Red wine is good for you - true and false. Red wine can stop arteries clogging, but that doesn't mean you can imbibe gallons - one a glass a day is all you need - and red rather than white.

Spicy foods cause ulcers - false. Bacterial infections or overuse of certain medicines cause ulcers, not spicy food, although spices may aggravate an existing ulcer.

Spinach makes you strong - false. Spinach does contain iron, but it also contains oxalic acid which discourages iron absorption.

Eating sweets and snacks rots your teeth - true and false. It depends what you're eating, the stickier it is the longer it hangs around on your teeth and gums, which gives tooth-destroying acids a chance to form. Things like hard sugar candy and chocolate shouldn't cause tooth decay, as they are easily washed out of your mouth by saliva. But eat crackers, biscuits, cookies, peanut butter, toffees, sugar-coated cereals and other more "claggy" snacks and you should brush your teeth sooner rather than later!

Water hydrates you better than other drinks - false. There is no significant difference in the hydrating properties of water, coffee, tea or soft drinks - they all contain mostly water anyway. But sugary or fizzy drinks won't help your teeth or your waistline.

Remarkably, half of the 22 adages above actually are based on facts. So Granny really did know her onions!

Shabby chic kitchens are now one of the most sought-after kitchen styles, in the modern world; especially in country properties. However it is not by any means a new look since it originally evolved in the mid-twentieth century, when it became a popular method of creating an acceptable and charming way of decorating as money was tight after the second world war.

The essential element that conjures up the shabby chic look is a timeless elegance where furniture does not have to match, just so long as all your pieces have an inviting, slightly worn look, and are closely related in colour or tone. True shabby chic in your kitchen should reflect the grace and beauty of a bygone era, when life was simpler and altogether more natural.

Shabby chic kitchen styles are characterised by a rural style comfort coupled with old world whimsy. The décor, which is normally based around white, off-white or very pale unobtrusive colours such as soft greens, pale blues, pale yellows or muted beiges, should look effortless and completely uncontrived.

Before setting about creating this well-loved style take a good look round your kitchen and consider the existing style in terms of wall colours, cabinets, appliances, work surfaces and even cookware. Also take note of the size and layout of the room to determine if there is enough floor space to accommodate additional pieces or the necessary wall space for additional cabinets or shelves. If not, begin thinking about how you could change the current look to achieve a more rustic feel. Newly painted walls and certain paint effects on furniture, along with the right accent pieces will help change the whole look your kitchen.

In the main most kitchen walls are best painted in plain or lightly toned white to maximise the amount of light, however for something a little more unusual you could also try painting your walls in a pattern of wide pastel and white stripes. If however you prefer wallpaper, to make your kitchen appear more homely, it is best to choose a muted floral pattern, especially roses or tiny bunches of daisies or forget-me-nots.

Do bear in mind though that endearing as old fashioned wallpaper can look it should not even be considered if your kitchen doesn't have proper ventilation to stop it getting overly steamed-up when cooking; otherwise you will soon be re-papering!

Concrete, grotesquely tiled or tacky linoleum floors are a complete anathema to the shabby chic kitchen style so they will need to be replaced with something more in keeping with your new soft and natural look. This of course can be a major and expensive undertaking, so if you don't want to completely replace your kitchen floor you can simply add lots kitchen mats or rugs in muted pink, blue, green, or floral designs; just be sure to choose colors that complement your walls and existing flooring.

Plain wooden floorboards can be given a new lease of life by being sanded and varnished to prevent splinters in bare feet! They can also be stained in a 'natural' wood colour but be careful that you don't go too dark and make you kitchen feel grim and gloomy. Very pale wood may be stenciled in an interesting design before varnishing, but do ensure that the design ties in with your existing colour scheme. A clever floor design could be used to emphasise a special feature such as an old couch, a favourite rocking horse or a freestanding butcher's block.

Kitchen furniture and cabinets can be decorated in a number of exciting paint finishes, which is then distressed in varying degrees depending on just how truly 'shabby' you want your kitchen to look. If you are not sure how to go about the distressing process simply dial up 'How To Paint Shabby Chic Furniture' on the internet and you will find plenty of information and even videos on Youtube.com that cover the subject in depth.

To avoid an overly modern look you should always replace any current hardware on kitchen cabinets and door furniture with something more appropriate, such as glass or vintage ceramic knobs; which will indeed look so much more authentic. You can often find just what you need on Ebay or you could try scouting round some of the more reputable building reclamation yards. Sometimes it is worth buying old cabinets or doors just to lay claim to stunning or unique door and cupboard accessories.

If your current kitchen appliances don't look remotely right in your new kitchen, you can have them repainted to match everything else, as fortunately companies do exist that will repaint appliances. Alternatively, if you want to replace the appliances altogether, there are also companies that sell retro style appliances.

Don't forget to give your kitchen a light and airy window treatment. Curtains, rather than blinds, are an excellent way to emphasise the shabby chic look especially dainty floral prints, held in place with antique tie-backs. For a cleaner, unfussy look you could also use cotton nets slung over pine poles or even pure lace, draped across just half the window.

Be aware that one of the joys of shabby chic style is that it utilises less than perfect pieces, so do check out jumble sales, garage sales and even skips for discarded items. Someone else's rubbish may just be the perfect display piece for your shabby chic kitchen. A tart-up with a pretty paint finish or some floral material can give new life to many a neglected treasure.

The right accessories will simply 'make' your shabby chic kitchen so these should be chosen and placed very carefully to give the right effect. This stage of achieving the shabby chic look is rather like planting a country garden, in as much as it should all look entirely natural and as if it has just happened by chance.

However as any skilled gardener will tell you it takes quite a bit of forethought and planning to create just the right uncontrived look. Exactly the same will apply to your kitchen but, being careful not to over-clutter working space or surfaces, you can easily develop the shabby chic feel simply by applying a little imagination, time and effort and the best of all it won't cost you a fortune.

Some really great additions to your kitchen can include distressed corner shelves for old battered recipe books, Victorian chamber pots for plants, early spice racks, embroidered hand-towels and homespun linen on wrought iron hooks, well-worn oven gloves, 1950's tin canister sets and cookie cutters, granny's wash board, sepia framed photos, Imperial kitchen scales, a rose patterned china tea service, vintage wooden boxes and serving bowls, old baking trays, copper pans, fish kettles and of course lots and lots of fresh flowers.

Finally do remember that the true shabby chic look is only achieved by being understated, so you don't need to have every single item in your kitchen distressed, miss-matched or floral. Sometimes less is definitely more and it is also vital that your own personality comes into play to make your dream kitchen particularly special and unique to you.

We polled our family and friends and here are a few of our favorite Halloween Dishes and Autumn Recipes:

Hot Halloween Appetizer - Swamp Dip (aka Creamy Feta Spinach Dip)

1/4 cup (1/2 stick) butter
1 cup onion, chopped
1 small red bell pepper, chopped
1 tablespoon garlic, finely chopped
2 tablespoons flour
1/2 cup chicken broth
1/2 cup heavy whipping cream
1/2 cup feta cheese
1 teaspoon Italian seasoning
1/4 cup plain yogurt
1-10 oz. package spinach leaves, stems removed, cut into thin strips
1/8 teaspoon hot pepper sauce
Salt and pepper
Dippers including crackers, bread chunks and assorted vegetable sticks

Melt butter in 10-inch skillet and add onion, red pepper and garlic. Cook over medium heat until softened. Stir in flour and continue cooking 1 minute.

Whisk in broth and whipping cream. Continue stirring until mixture is thickened.

Add cheese, seasoning, yogurt, spinach and hot pepper sauce and stir until spinach wilts and mixture is heated through. Season with salt and pepper to taste.

This Halloween appetizer is best served warm with dippers.

Easy Halloween Dessert - Chocolately Holiday Bark

The best thing about this Chocolatey Holiday Bark recipe is that you can customize it for every holiday or theme party. For Halloween, use white chocolate and candy corn. For a Football party, milk chocolate and candy the color of your favorite team. The possibilities are endless.

Ingredients

16 chocolate sandwich cookies, chopped
1-1/2 cups broken small pretzels
1/3 cup raisins
1-1/2 pounds chocolate, broken into squares
2 cups candy (M & M's, candy corn...)
Sprinkles

Start by spreading the cookies, pretzels and raisins evenly onto a lightly greased small baking sheet.

Melt chocolate in a bowl set over a pan of simmering water, or in the microwave, stirring frequently until melted. Remove from the heat while there are still a few chunks, and stir until smooth. Watch carefully as chocolate can burn easily.

Drizzle chocolate with a spoon over the goodies in the pan, spreading the top flat to coat evenly. Top with candy and sprinkles. Let cool until firm. Break into pieces and store in an airtight container.

You can usually find sandwich cookies the color of the holiday (orange for Halloween, red for Christmas...). Coordinate the cookies, chocolate, candy and sprinkles to match the holiday or theme of your party.

Most Requested Autumn Dessert - Spiced Cranberry Apple Cobbler

This Autumn Recipe is the perfect dessert for a cool Fall night.

Ingredients

4 cups cranberries
6 Granny Smith apples, peeled and sliced thin
2 cups firmly packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 teaspoon vanilla
2 cups plus 1 tablespoon flour, divided
4 tablespoons butter, cut into bits
2 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening (I use butter flavored)
1-1/2 cups sour cream
2 teaspoons sugar

Preheat oven to 400 degrees. Combine cranberries, apples, brown sugar, cinnamon, vanilla, ground cloves and 1 tablespoon flour in 3-quart baking dish. Mix evenly and dot top with butter bits

Stir together remaining 2 cups flour, baking powder and salt in medium bowl. Cut shortening in using pastry blender or 2 knives until crumbly. Add sour cream and blend well (dough will be sticky).

Drop dough by spoonfuls on top of fruit mixture. Sprinkle with sugar and bake for 20 to 30 minutes on middle rack until top is golden.

Spiced Cranberry Apple cobbler is outstanding served with Cinnamon Vanilla Ice Cream. It is hard to find in stores so you can make your own. Add a teaspoon of cinnamon to a pint of softened vanilla ice cream and re-freeze. When ready to serve, put a big scoop on top on each bowl of warm cobbler.

Although "sugar" covers many meanings these days, those granulated particles that we simply call them sugar are the basis or at least a significant component of all sweets we know. Therefore, each time we taste a tiny cookie, a bar of chocolate or even a scoop of ice cream, we should be fully aware of that the sweet taste is given by pure sugar.

Peanut Brittle

I do not think one can ever have enough chocolate cookie recipes. Many chocolate cookie recipes go way back to our grannies baking them in big batches for all the visiting grandchildren. This recipe is no exception but, it is an old fashioned recipe that can very easily be made with an electric mixer with a dough hook. I normally start with the normal beater for creaming the butter and sugar and only when it starts getting very stiff do I move to the dough hook. This chocolate cookie recipe is best made the day before you want to bake it and thoroughly cooled down in the refrigerator.

Ingredients for these chocolate sticks:

6 tablespoons of butter
3/4 cup of sugar
1 egg
1 tablespoon of milk
1 teaspoon of vanilla or pinch of cinnamon
5 teaspoons of cocoa
1/8 teaspoonful of baking powder
1 1/4 to 1 1/2 cups of sifted pastry flour

Method:

Cream the butter until soft.
Add the sugar gradually and beat well
Add the beaten egg, milk and vanilla and mix thoroughly.
Sift cocoa, baking powder, and a pinch of salt with about one-half cup of the flour.
Stir this into the mixture first, then use the remainder of the flour, and more if necessary, to make a firm dough that will not stick to the fingers.
Place in the fridge to harden.
Preheat the oven to 350oF.
Sprinkle the board with cocoa and a very small amount of sugar.
Use small pieces of the dough at a time and roll out thin, cut in strips about one-half inch wide and three inches long.
Place closely in pan and bake in the oven for three or four minutes. Great care should be taken in the baking to prevent burning. Watch them like a hawk!
Gather the scraps after each rolling, if soft, and set away to harden, if you have to use too much cocoa to prevent them from sticking it will make them bitter.
The colder and harder the dough is, the better it can be handled; therefore it is best made the day before using.

EASY APPLE COBBLER WITH A PIE PASTRY CRUST

8 cups sliced and peeled apples, preferably Granny Smith
1/3 cup apple cider
1/4 cup all-purpose flour
1/2 cup packed light brown sugar
1/2 tsp ground cinnamon
1 tbsp chilled butter, cut into pieces
1 sheet of refrigerated pie dough
1 tsp water
1 large egg white, lightly beaten
1 tbsp sugar

Preheat oven to 350 degrees.

Arrange apple slices in an 11x7-inch baking dish. Drizzle the cider over the apples. Lightly spoon flour into a dry measuring cup and level it off with a butter knife. Combine the flour, brown sugar, and cinnamon together in a small bowl. Cut the butter into the flour mixture until mixture resembles coarse meal. Sprinkle flour mixture over the apple mixture. Roll dough into a rectangle one inch larger on each side than the baking dish. Place the dough over the apple mixture and fold edges under and flute with your fingers. Cut two or three small slits in the pastry to allow steam to escape. Combine the water and egg whites, stirring together well. Brush the egg white mixture over the dough using a pastry brush. Sprinkle sugar over the top of the pastry. Bake at 350 degrees for about 40 minutes or until the crust is a golden brown.

Yield: 6 to 8 servings.

You know fall has arrived when the first apples arrive in grocery stores. There are many varieties of apples to buy, Granny Smith, McIntosh, Gala, and more. In the fall we switch from lighter meals to heartier ones, such as soups and stews. This recipe for Apple Gingerbread is also a sign of fall, a delicious ending to any meal and a delicious after-school snack.

The original recipe was published in the 1964 edition of "The Joy of Cooking," by Irma S. Rombauer and Marion Rombauer Becker. To make the gingerbread healthier I substituted unsweetened applesauce for the butter. Since some fat was needed I added a couple of tablespoons of olive oil. The sweetness comes from Splenda, Splenda Blend for Baking, and the apples. Though the original recipe called for light molasses, I only had dark on hand, so that is what I used.

Choose a firm variety of apple for this recipe. Granny Smith work well, as do Honeycrisp, a cross between Macoun and Honeygold apples that was developed at the University of Minnesota. Fresh pears may be substituted for the apples. Two tablespoons of chopped candied ginger may be added to the batter for a really gingery taste.

Serve the Apple Gingerbread while it is still warm. It tastes good plain, or you may top it with sugar-free vanilla yogurt or "free" whipped topping. Kids will enjoy making this quick and easy recipe. Better yet, they will have two pans of gingerbread when they are done, one to freeze and one to eat now. If they give some to the dog pretend you didn't see it.

APPLE GINGERBREAD

INGREDIENTS:

1/3 cup unsweetened applesauce

2 tablespoons extra light olive oil

3/4 cup Splenda

1/4 cup Splenda Blend for Baking

1 large egg, room temperature

1/2 cup dark molasses

2 1/2 cups presifted regular flour

1 1/2 teaspoons baking soda

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon salt

1 cup hot water

1 very large apple, peeled and thinly sliced

2 tablespoons butter

METHOD

Preheat the oven to 350 degrees. In a batter bowl whisk together the applesauce, olive oil, Splenda, Spenda Blend, egg, and molasses. In a small bowl combine the flour, spices, and salt. Get out two layer cake pans and put a tablespoon of butter into each one. Melt the butter in the oven. As soon as the butter has melted take the pans out of the oven and coat the sides with baking spray.

Arrange peeled apples in a circle on the bottom of each pan. Add the dry ingredients to wet alternately with hot water. Make sure there is no dry flour on the bottom of the bowl. Pour batter over the apples and bake for 25-30 minutes. Let the gingerbread cool for a few minutes. Cover two plates with release foil. Invert one pan of gingerbread on each plate. Enjoy!

For most of our adult lives, our bodies are predictable machines. Year after year, we fuel them with the same favorite foods, catering to our cravings, confident that the only adverse effect will be an overly full belly. All of that changes, however, as we approach our golden years. With the onset of old age, the standard meals that have been fixtures on our menus for decades can suddenly become health hazards. For me, this became painfully apparent only recently, when I saw my elderly father's nutritional needs experience a major shift.

When I first made the decision to care for my elderly father more than 10 years ago, I pretty much gave Dad free reign of the kitchen. He ate all of the dishes he'd always enjoyed, including spicy foods and pre-packaged high-sodium meals. But after we contracted the services of Dad's current private caregiver, I realized I'd been doing him a big disservice by failing to closely monitor his meals.

Based on what I've learned about the changing dietary needs of the elderly, I've compiled some tips for other baby boomers who are caring for an aging parent. Whenever possible, incorporate these strategies to increase the overall health and well-being of your "patient":

o Watch the fat. Since elderly people tend to be less active and don't exercise as much, they start trading muscle tone for added body fat. This can increase their risk of developing diabetes, high blood pressure, and heart disease. I make sure Dad's meals don't contain too much fat, and that he gets some form of physical activity a few times a week.

o Keep it balanced. As our parents age, it's more important than ever that they get all of the vitamins and nutrients they need-especially calcium, which helps to ensure bone health. Plan a menu that includes all of the food groups: lean meats, fruits and vegetables, milk and dairy, and breads and grains.

o Go dry. Seniors need a steady supply of calcium to prevent bone fragility. Nonfat dry milk is an excellent calcium source, and also contains plenty of vitamins A and D. Use it as a smart milk substitute for most any meal. Dry milk remains fresh for several months when stored in an airtight glass container.

o Limit the sweets. Cookies, cakes, and other fatty desserts are empty-calorie treats with little to no nutritional value. Do your best to reduce the frequency of these treats for your aging patient.

o Meet daily requirements. Older adults need the recommended amounts of essential vitamins and minerals based on their ages and lifestyles. I plan Dad's meals to make sure he's getting plenty of zinc, iron, and fiber through lean red meats, dried beans, seasonal produce, and whole-grain breads.

o Control your inventory. It can be tempting to take advantage of discounts by buying in bulk, but then you'll have to find room to store it all. Plus, the surplus could go to waste if it's not used before the expiration date. Buy only what you know will get used. When you must purchase foods in larger quantities, divvy it up into individual containers and freeze it to be consumed later.

o Turn one meal into four. Cook for larger portions and then save the leftovers for future meals. Some foods, such as lasagna, meatloaf, and casseroles, are better suited for reheating than others.

o Master smart storage. To extend the freshness of non-refrigerated foods, keep them in tightly sealed glass mason jars. For best results, put them in the freezer for a night before transferring them to the pantry.

This storage solution works well for pasta, rice, flour, cereal, dried milk, and other shelved staples.

With some careful planning and the guidance of a trusted doctor or caregiver, you can help ensure that your aging parent receives fresh, healthy meals that provide both satisfaction and sustenance.

Apples are celebrated in everything from song to the dinner table. Apples have long been a staple in a well-stocked kitchen. From picking apples in Grandma's back yard to buying them at country fruit stands, we can always find a way to enjoy this delicious fruit. Here are a couple of old-fashion recipes that use these wonderful fruits. The California Fresh Apple Cake is simple, easy, and delicious. The Homemade Applesauce is great and is especially good when you add the old-fashion cinnamon "red hot" candies while simmering the apples.

CALIFORNIA FRESH APPLE CAKE
This old recipe is from West Covina, California.

4 cups coarsely diced apples
2 cups sugar
1/2 cup cooking oil
1 cup chopped nuts
2 eggs, well beaten
1 1/2 tsp vanilla
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt

Heat oven to 350 degrees.

Mix apples and sugar thoroughly. Add the oil, nuts, eggs, and vanilla. In a small bowl, combine the flour, baking soda, cinnamon, and salt; add to the apple mixture. Combine mixture well. Pour mixture into a greased 9x13x2-inch baking pan. Bake at 350 degrees for 1 hour or until cake shrinks from the edge of the pan. Decrease heat to 250 degrees if you use a glass pan.

HOMEMADE APPLESAUCE

6 large Granny Smith and/or McIntosh apples
1/2 cup apple cider or juice
1/4 cup granulated sugar
1 tsp ground cinnamon
dash of nutmeg

Peel and core apples; cut into chunks. In a 3-quart saucepan combine the apple chunks and the cider or juice. Bring the mixture to a boil. Reduce the heat, cover and simmer for 20 minutes or until the apple chunks are very tender. Stir in the sugar and the cinnamon and nutmeg. Cook 2 minutes longer. Mash while still in the pot or cool then puree in a food processor. Cool; store in clean jars. Refrigerate for up to two weeks. Add 1/4 cup old fashion red hot cinnamon candy drops, if desired when you simmer the apples.

Yield: 4 cups

"Granny, how does Mommy get presents when she's way under water?"

The child was always full of questions. How was Claire supposed to answer this one? And why did her daughter have to join the reserves anyway? She knew she wanted to give back, but please, she had a husband, a son, and now she'd miss Christmas with them all.

But even as she sighed, she still felt a sense of pride. Her only daughter, Mandy, had always been like that- always giving. She'd even done mission work during her college summers and then joined the Peace Corps for a few years before meeting her husband. So, it really shouldn't have been a surprise when Mandy joined the Navy reserves several years ago. One weekend every month, and once a year for four straight weeks, she relieved a Submarine's full time Doctor. Claire thought it nothing more than a giant tin can, but her daughter and grandson thought it was cool. Still, it scared the daylights out of her knowing how far away, and how far below her daughter was.

"Granny, are you listening to me? How can Santa climb down the chimney when the submarine is under water? I bet they don't even have fireplaces where mom is," the boy continues.

"Jake, honey, let's ask your daddy when he gets here. That sounds like a question for him" says Claire.

"Thanks Mom", says her son-in-law standing in the doorway. "Glad to know you think I'm so wise".

They chuckle together as he sits down for a home-made meal. Once a month dinners have become something of a tradition whenever Mandy is out of town.

This month-long stint would be hard though. Because this trip came during Christmas. He'd never spent it without her- not since they'd married 6 years ago. And he worried that he'd fail miserably while she was gone. His wife was always the one to make the holidays special. She baked cookies, decorated the house, bought all the gifts, wrapped them up, and even ordered a tree every year. But she wouldn't be here this time, and with Christmas fast approaching, he was unsure of himself. That's when his son asked again? "Dad, how will Santa get to mom?"

That's when he got the idea. The way to answer his son's question, and still let his wife know they were missing her over Christmas.

"Son- we need to send Santa a gift with our letter this year. That way we know Mom will still get all the presents she's due, even if she's a thousand leagues under the sea."

The next day, they wrapped up a pair of Scuba fins, a snorkel and one little underwater flashlight. John explained that the snorkel and fins were for Santa, while the light was for Rudolph (just in case his nose wasn't waterproof). Since the Reindeer were magic, and could fly anywhere, on land, above air, or under the sea, these few things were all Santa needed to help find the right sub his mom was on.

That seemed to satisfy his four year old and they wrapped up the gifts with a letter to Santa. Since Jake couldn't yet read or write, John wrote the note, but included some hand-drawn pictures from Jake.

On Christmas Eve, a package several miles under the sea was opened by a mother missing her family. You should have seen the joy in her face as she pulled out the gifts and read her husband's handwritten words.

"To my precious mermaid- We love you and miss you. These fins represent how I try to stay afloat while you are gone. The snorkel is to help you remember that I never take one breath without thinking of you. And the light- that is what you are to our Family! A love so bright and pure, that even in your absence, we shine, steadily burning awaiting your return. These pictures are from Jake. He wanted to make sure his mommy wasn't forgotten by Santa Clause. Merry Christmas! We will be here when you pull back into port!" love, your husband and son.

There are many delicious low-fat, high-fiber snacks and desserts available these days in grocery stores and natural food stores. The new nutritional labeling makes it easier than ever to know what is in a product. Be sure to look for filling low-calorie foods. Also be on the look out for trans-fats! Many store bought products have this unhealthy fat lurking inside them. Usually the most filling foods have high fiber content. High fiber is key for making the hunger pains go away and for sweeping your digestive system. You also want to look for a low sugar count as well as low sodium. Too much sugar or sodium in a food will cause you to retain water and make you feel bloated.

Some of the absolute best choices are just about any kind of fruit. Strawberries, bananas, blueberries and apples are some of the most filling fruit. Mix the fruit with a cup of low-fat yogurt for added calcium and acidophiles.

Vegetables are also great to eat with hummus or a yogurt dip. Sugar snap peas, celery, carrots and cauliflower are all easy to pack and eat. A little bit of peanut or almond butter is tasty and nutritious on celery stalks.

Homemade snacks are great too. It's easy to make homemade applesauce. All you do is peel and cut apples (Granny Smith is great because they are tart), put them in a baking dish, add honey or agave syrup and sprinkle cinnamon on top. Mix well and bake in the oven at 350* degrees for about ½ hour or until tender. Delicious!

Cookies are easy to make healthy! Old Fashioned Molasses cookies are a fantastic treat and so good for you to! So are Chewy Oatmeal-raisin cookies. The best way to make a cookie healthy is use honey or agave syrup for the sugar substitute. Also, use unbleached flour or whole wheat pastry flour instead of bleached white flour. Applesauce or yogurt is a good substitute for oil and or butter.

For desserts, a fruit crisp or cobbler is easy and delicious! If you like chocolate, these Dutch cocoa fudge brownies will surprise you with their rich chocolate flavor and fudge like texture. They're a fast and simple treat. Combine 2 tablespoons butter, 1 cup of sugar, ½ cup unsweetened applesauce, 1 egg, and 2 teaspoons of vanilla in a bowl and mix. Then slowly beat in ½ cup unsweetened cocoa powder and ¾ whole-wheat pastry flour. Bake for 25 minutes in a 350* degree preheated oven. Quite a treat!

The human body requires eight glasses of water a day. Consuming water helps aid the process of weight loss and keeps the body fit and healthy - even when one is on a diet. If you do not like the taste of water, try adding a slice of lemon to each glass you consume.

Drinking eight ounce glasses of water is key not just for weight loss, but for subsequent weight maintenance. It is a mistake to think that you can cut off water retention by cutting back on your daily intake of water. When you do that, the opposite occurs. The more water you drink, the more your kidneys are stimulated. When that happens, the kidneys work to reduce the amount of water retention. The body then burns more calories.

Drinking water is a much healthier alternative to the consumption of diet soft drinks. For one thing, water has no caffeine and no calories. Artificially flavored beverages in general should be avoided. Within one or two weeks, you will no longer have any desire to drink unnaturally sweetened beverages, as natural beverages and foods will taste very good to you. The problem with diet drinks is that they tend to turn one's appetite on and lead people to overeat. Drinking water is a great solution. Whenever you have a craving for sweet foods or drinks, have a glass of water instead.

What's more, instead of having snacks and desserts, try eating fruit instead. High calorie foods that boast high degrees of fatty acid sugars should avoided. Try nibbling on fruit throughout the day. Nearly every single kind of fruit is healthy and safe for those on a diet. Psychologically, you can help yourself by keeping fruit in plain view on the dinner table and on the counter. Next time you go to the grocery store, pick out two kinds of grapes, some tasty Granny Smith apples, nice oranges, peaches, bananas, papaws, kiwis, and cantaloupe. Integrate fruit in to all your meals as a dessert substitute for sweets like cookies, cakes, and pies. The successful reliance on fruit is a big step in losing and maintaining one's weight.

Be weary of snack food and junk food in general. The big companies that manufacture these types of food are dependent on people to get "addicted" to them - otherwise they would not make any money. These companies make a huge fortune by keeping people fat with these artificially sweetened products that boast no nutritional value whatsoever. Overcome your addiction to these products by making healthy lifestyle choices and saying "no" to gaining more weight. It can be difficult to cut these types of foods out of your diet, but if you really want to lose weight, then you can do it. And the process starts with the most simple substance of all - water.

I found the prospect of becoming a grandmother somewhat daunting. I was younger than I thought a grandmother should be when I got the news that I was going to become one myself. I admit, it was not a role that I was emotionally ready to embrace. I had been a young mother, and had certainly hoped my daughter would not face that same challenge. I remarried when she was a teenager, then had two more children. On getting the news that she was expecting, I remember thinking "What do I know about being a grandmother - I haven't even finished raising my own kids yet!" I don't like to be unprepared, so I read a few books about grandparenting. That gave me a little help, but I was still uncertain. I thought about other grandmothers I knew, and got a few ideas I liked and a few more that I didn't. But I couldn't quite figure out what kind of grandmother I wanted to be. Then I thought about my own grandmother, Granny, as she's known by most people, and I knew I had the answer.

I didn't realize it until that moment, but my own grandmother was the example for the kind of grandmother I wanted to be. I am fortunate that I got to spend a lot of time with my grandparents when I was a little kid. Here's what I learned from my Granny:

Grandmothers always have a cookie jar. For my entire life, Granny always had a cookie jar full of cookies. When I was a little tiny girl, just at eye level with the counter, Granny would get the cookie jar down for me. When I was a little older I learned how to pull the chair over so I could reach. As I got taller, if I really stretched, I could reach the cookie jar with my finger tips and move it close enough to get it down off the counter to find out what kind of treat was inside. Always the first thing I did when I went to Granny's house was check the cookie jar, and there were always cookies in it. Many years later, I'd drive my own children to Granny's house and the first thing I'd do is get us all a cookie. So grandmothers must have a cookie jar, and on my granddaughter's first Christmas, my daughter bought me my own cookie jar.

Grandmothers are creative. When I was little, there weren't a lot of toys at Granny's house, but we never lacked in ways to entertain ourselves. Granny had a coffee can full of pop bottle lids - the metal kind that required an opener to remove them from the glass pop bottles. Those provided hours of entertainment! I'd sort through them and pick out the ones that weren't bent too badly and build a castle with them. We also did crafts, like making beautiful flowers from tissues, and when I was about five or so, she taught me to crochet. No matter how much I messed up, she always praised my efforts.

Grandmothers know how to have fun. Time at Granny's was never boring. She always had lots of fun things we could do. I could wash dishes as long as I wanted, and even rinse them, but never when the sharp knife was in the sink. She'd put a kitchen chair for me to stand on right by the sink, fill it with warm - but never too hot - sudsy water on one side and warm water on the other side to rinse in. I could wash dishes for as long as I wanted to. If the water got cold, she'd warm it back up for me. If I accidentally splashed water all over the place, she'd let me clean it up with the towel. She always told me I was doing a great job.

She let me help in other ways too. We made the most delicious desserts. We'd take a box of graham crackers, break the crackers in half, then put icing between the two halves. Graham cracker cookies we called them. Another treat we fixed was peanut butter mixed with butter and syrup. We'd spread it on a piece of white bread and I thought it was delicious! As a child, I could not imagine anything could taste better, or be more fun.

Sometimes we'd go to the park and I'd get to spend the whole day playing with all my cousins. On hot summer nights we'd go to the ice cream shop, and Granny and Grandpa waited patiently while I chose exactly the flavor I wanted. Sometimes all we'd do is go for a ride in the car. In those days there were a lot of old abandoned houses around, and I really wanted to go inside one, so Granny decided to take me "spooking". I was so excited! Armed with flashlights, even though it was daytime, we went inside one of the old houses. I made it about as far as the front door then got too scared and started crying and Grandpa had to carry me back to the car. We decided we wouldn't go "spooking" any more.

Grandmothers are magical. Granny had the amazing talent of being able to pull a penny out of the wall at any time. I would point to a spot on the wall and she could always pull a penny out. No matter how hard I tried I could never find those pennies and get them out of the wall. She let me keep the pennies too, and even gave me an old powder box to put them in. I still have that powder box.

Grandmothers are patient. One of my favorite things to do as a little girl was "fix" Granny's hair. She would sit and let me brush her hair, part it however I wanted to, and adorn it with various bobby pins and hair clips. She always told me it looked beautiful, and sometimes she even wore my attractive hairdos in public. She'd also let me play nurse and rub lotion on her arms and legs - she probably had the softest skin in town!

Other times, she and Grandpa would pack up the fishing gear and take my brother and me fishing. They'd bait our hooks over and over again after we cast our lines badly and lost the worms. Every now and then we'd catch a fish and it was always a beauty. One time while attempting to cast my line I accidentally snagged my brother's neck. Grandpa just unhooked my brother while Granny packed up the fishing gear, then took us home to clean him up. She didn't even scold me.

Grandmothers never disappoint. Thanksgiving has always been a big deal for me because for most of my life the way we celebrated was an unwavering tradition in our family. We always had Thanksgiving dinner at Granny's house. Even as an adult with my own kids and then grandkids, we went to Granny's house for Thanksgiving. Then six years ago, Grandpa died the day before Thanksgiving. I can't even describe how sad we were. No one even wanted to have Thanksgiving that year, but we went to my mom's house for dinner anyway, and my grandparents weren't there, for the first time in my life. I still get a lump in my throat thinking about it. The following year we were going to start a new Thanksgiving tradition and have dinner at my mom's house. I knew it made sense to do that, but emotionally I didn't want to make that change. The worst part was, Granny said she wasn't going to come since it was near the one year anniversary of Grandpa's death. I told my mom she had to, and she said "Well, she won't". About a week before Thanksgiving, I was at Granny's house and brought up the subject. We had a lengthy discussion and I did my best cajoling, but she said "Christy, I'm too old now." I clearly remember standing in front of her saying "But I'm not old enough" as tears rolled down my cheeks. She wrapped me in her arms then, as she'd done so often when I was little, even though I was now a full grown woman with my own grandchildren, told me that she loved me and that she'd be there for Thanksgiving. And she was.

Grandmothers love unconditionally. Thinking back on a lifetime of memories of Granny, the thing that stands out for me is that in my whole life, Granny never once said mean words to me. I don't recall ever thinking she was mad at me. I know I wasn't a perfect child, but I always felt like to her I was beautiful and everything I did was wonderful. She believed in me. Even as an adult she still treats me that way. How lucky I've been to have a lifetime of love, praise and encouragement like that. I visit Granny as often as I can. Sometimes we play cards, sometimes we watch TV, sometimes we just talk. When I'm traveling I call her to pass the time while I'm driving. Sometimes I call her when I'm sad or frustrated. She always encourages me and does not judge me. I know I am so very lucky to have had a grandmother for 47 years. I also know that's not nearly long enough.

With my own grandchildren, I've fallen short on most of the lessons I learned from Granny. I've got a cookie jar, but it's never had a cookie in it. It does have old Halloween and Christmas candy in it though. I don't really like to have my hair brushed because no matter who does it, it pulls, and I don't sit down long enough to be lotioned. I still don't bait my own hooks, let alone someone else's. But of everything I learned from Granny, what I am determined to carry on to my grandchildren is loving them unconditionally; believing in their unique abilities and encouraging and praising them in whatever they do. If I am able to maintain the relationship with them that my grandmother has with me, I'll feel like I lived up to Granny's example.

Losing weight isn't complex. It's simple. The best way to lose ten pounds might shock you because of the how easy it can be accomplished. You don't have to do much.

Simply make a few changes in your current habits, and you will find yourself, once again, fitting into old clothes. Which is always a joy.

Instead eat another piece of fruit, like a banana.

The late night demons are what destroy most weight loss efforts, whether it's losing 10 pounds fast, or losing 40 pounds over a short period of time. It doesn't take much to derail good weight loss intentions.

One slip up leads to another, and that to another, and from there, you're back searching for a way to lose a few pounds fast.

To avoid dieting pitfalls, keep this perspective: one meal will only satisfy you for a few moments, and then it's over. Satisfaction gone. Then what? Well, you've just ruined your new diet plan.

Never let your emotions get the best of you. Losing 10 pounds doesn't have to be difficult. Simply remove a few items from your daily food intake and you will drop 7 pounds ridiculously fast. Add more water to your daily intake and there goes another 2 pounds.

The more water you drink, the less water your body will hold onto. And finally, the best way to lose 10 pounds, and keep the weight off for good--add a short 20-minute walk after dinner, 3 to 4 times a week.

It's simple stuff. Do this and you might just find you've lost 12 or 15 pounds in record time. Good luck.

Ingredients:

¾-cup Chopped and peeled Granny Smith Apples

¾-cup Chopped and peeled fresh pineapple or canned drained

12.4 ounces Refrigerated cinnamon rolls with icing

½-cup Pecan or walnut halves

2-tablespoons Melted butter

⅓-cup Brown sugar, packed

2-tablespoons Corn syrup

Instructions:

Preheat oven to 350°. Combine chopped apples and pineapple in a medium bowl and set aside. Spray 9-inch glass pie plate with cooking spray with flour. Spread 1 cup of chopped apple and pineapple mixture in sprayed pie plate. Separate roll dough into 8 rolls and cut each roll into about quarter size and place in a large bowl. Add remaining apple and pineapple mixture along with ½ cup of pecans or walnuts.

In a small bowl, stir together butter, brown sugar and corn syrup. Add brown sugar mixture to dough mixture; toss and spoon mixture over apples in pie plate.

Bake 30 to 35 minutes or until deep golden brown. Let cool for 5 minutes. Turn upside down onto serving plate. Remove lid from icing and microwave icing on high for 10 to 15 seconds or until thin enough to drizzle. Drizzle over warm coffee cake and serve warm.

Serves 8

Easy Bread Recipes: Quick - And - Easy Yoghurt Loaf

Ingredients:


2 ¾ cups natural fat-free yoghurt
1 ½ tsp Bicarbonate of soda
4 cups whole wheat flour
¼ cup brown sugar
1 tsp salt

Method:


Preheat the oven to 350° F. Grease a 6-cup loaf pan.
Mix the yoghurt and bicarbonate of soda and set aside for about 5 minutes to bubble.
Add the whole wheat flour, brown sugar and salt and mix well.
Spoon the dough into the loaf pan.
Bake for an hour at 350° F.
Allow to cool slightly in the pan.
Turn out onto a wire rack, cover with a bread cloth and cool completely.

Tip

Thick buttermilk may be used instead of yoghurt.

Easy Bread recipes: Very Easy Quick - Mix Health Loaf

Method:


3 cups whole-wheat flour
½ cup coconut
½ cup oats
½ cup sunflower seeds
2 Tbsp yellow sugar
1 tsp salt
1 tsp bicarbonate of soda
6 Tbsp milk
2 cups buttermilk
1 dessert spoon sesame seed

Method:


Grease a 6-cup loaf pan.
Preheat oven to 350° F.
Mix the whole wheat flour, coconut, oats, sunflower seeds, yellow sugar and salt together.
Dissolve the bicarbonate of soda in the milk.
Add this and the buttermilk to the flour mixture and mix to form a dough.
Spoon the dough into the loaf pan and smooth the top.
Sprinkle the sesame seeds over.
Bake for an hour. Allow to cool slightly in the pan.
Turn out onto a wire rack and allow to cool completely.

Cheaper tip

The oats and coconut can be omitted and the whole wheat flour increased to 4 cups.

What is this madness!? A movie game!? Yes, a movie game, get over it. :P Sorry about not getting this up earlier, YouTube was having issues. Addams Family Values manages to break the mold of cash-in movie games. Of course, it's by no means a superb gem of a game that'll be torturous if you don't play it, but it's not a hellish game that's terrible either. Overall, it's a fun, but insanely hard, game. For reasons I'll explain below. Essentially, the game doesn't follow the movie's plot. Instead, we have Debby Jellinsky kidnapping baby Pubert. You, playing as Fester, must get him back in a very Zelda-esque game. Anyway, today we start off exploring the gardens. The most important thing is talking to Granny. She gives you your first batch of cookies which can restore your health. After that, head to the left and go into the first dungeon. By "dungeon", I mean straightforward trek. At the end there's a boss which'll flail its arms at you. Just move out of their way and move up to attack between its attacks. If it swings an arm off to the side, use it to your advantage. Once it's dead, hit the switch and leave. The gate at the northern end of the garden is now open, and we can get into Jellinsky's yard. Our first task is given to us by a plant to get Jellinsky's Black Rose. He gives us a key which opens a gate on the right side of the first area, and the video ends as I go inside. I won't provide links to the rom, although I doubt you'd want to play anyways. :P
